Hi!
Well, I didn't have to work this weekend and that proved very useful to get a few things done!
Saturday, Katy and I went to watch Bethel at the MIAC CC meet at Como! It's been a standard to go the last weekend in October for the last 6 years so I kept it up this year! The girls were 4th overall and the guys were 6th overall. Not too bad Coach Timp!
Nikki was 3rd overall.
Dan was also 3rd overall.
And then there was us...on our way home!
Saturday night we did much cooking!
We made a cream sauce with prosciutto for some tortellini. It was great! This is a leftover picture but it was still awful tasty! Proof that I (we...Katy, really) can cook!
But wait, it didn't stop there! In continuation from last weekend (more to come on that one later) we had to use some honeycrisp apples so we referred to Mom's homemade cookbook and made some Baked Apple Pancake and that was just as delicious this morning!
Here it is! Taste this!
So, let's just say I'm not hungry at the moment and we've got leftovers!
But the fun didn't stop there. All of us should know how cracked up my car was. Well, I finally gathered the supplies and the spray paint and went to work. Here displays my work from this afternoon.
Before...
During...
And you'll have to wait for the after. Forgot to take a picture. :)
LAST WEEKENDNESS
Last weekend Katy and I hit Aamodt's Apple Orchard in Stillwater. It was our goal to pick our own apples but little did we know that's over and done with this season. So we were forced to pick them out of a bin in an extremely busy, overcrowded barn. But you saw our apple pancake results, so it must have been worth it.
Then we went to a Switchfoot concert a Concordia University in St. Paul. They're pretty much my favorite musical talent to listen to.
We had a very enjoyable evening sitting in the back. I never learned what you were supposed to do at a concert as a kid so that's why we were sitting in the back. I listen to music, I don't know about what you guys do. So I'm not into standing and making myself look foolish.
Well, that's it and that's all.
Red Sox are up 3-1 but might be in a little trouble. Gotta go watch!
